I tried something a bit more adventurous this week. Took some extra prep time, but apart from using quite a few pots & pans for making dinner tonight, it was pretty simple.
I used a lighter version of traditional Chicken Cordon Bleu & ended up lightening it even more. The recipe called for 5 teaspoons of butter & I just used a splash of extra virgin olive oil instead. I made a couple of other changes just because I was using what I had around. I used some Canadian bacon instead of prosciutto & low-fat Swiss cheese instead of mozzarella.
I was really pleased with the result. The chicken itself stayed moist & cooked through. It was quite tasty & everyone seemed to enjoy it. My husband’s only comment was that he’s not a big fan of gobs of melted cheese. What?!? What planet is he from? How can you not like melted cheese?
