Challenge #3 Loaded Baked Potato Salad

So for Mother’s Day we decided to do a barbecue at my parent’s house. We had pork steaks, spinach salad, corn on the cob & potato salad. The potato salad was my job & I wanted to try something different. I bought some super yummy fingerling potatoes from Costco – they have gold & purple potatoes in the mix. I wanted to try a roast potato recipe & I came across this one. I thought it sounded lovely!

I roasted the potatoes the night before – I actually don’t recommend this. When I make this again, I will roast the potatoes & make the salad right away. I also added a bit of may since I only had fat-free sour cream & it just wasn’t creamy enough. I also heated it up a bit to meld the ingredients together & served the green onions on the side. Warmed up a bit, it was so good! I highly recommend this recipe.
